From the medium-length blade, rigid and tapered, which serves to detach the meat from the bone, it is also called "scortichino".Used mainly by butchers, it is also useful in the kitchen, for small animals such as rabbits, chickens and game.  Its classic use is applied to raw ham, to separate the bone from the pulp.
