The silicone egg molds have a small tank on top of which a few tablespoons of water are added. As the water heats up during cooking, it turns into steam that flows through the top of the egg, cooking it to perfection. Meanwhile, the egg base cooks normally on the hot pan, but does not stick due to the presence of moisture from the steam.
